Maple trees, which are the only source of the syrup, are found in some Canadian states - New Brunswick, Nova Scotia and Quebec, as well as in the US states of Vermont and New York. The process of extracting maple syrup is a centuries-old tradition in North America, where Native Americans used it for both food and medicine. With their tomahawks, they made holes in the tree and collected the syrup in special containers. Nowadays, much newer and more precise technologies are used to extract the precious syrup. A small hole is drilled into the tree, allowing the sap to flow freely out.
Maple syrup contains fewer calories and has a higher concentration of minerals than honey. It can be found at any time of the year! It is one of the nutritional wonders of the world. This sticky, amber-colored, sweet-tasting syrup comes from the sap of a black or red maple tree. The juice is clear, almost tasteless and very low in sugar during this first process. It is then cooked to give it more thickness, flavor and color. Its sugar content is about 60%.
