ZOYA ORGANIC IRISH MOSS Organic Red Algae 60g
Red algae, also known as Irish moss and carrageenan, grows on the rocky shores of the Atlantic Ocean. Boiled in water, the red algae thickens and forms a jelly. It is particularly popular in Ireland, where it is combined with milk, vanilla and alcohol to form a jellied cream similar to panna cotta. In Asia, it is used together with agar-agar to make jelly desserts.
Method of use:
Place a handful of the red algae in a glass container and rinse well. Leave to soak in lukewarm water for at least 3 hours, then blend on high speed until you get a smooth paste. Store in the refrigerator for up to 10 days. Use the mixture to thicken and stabilize drinks, sauces and desserts.
