What is xylitol?
Xylitol, birch sugar is a natural sweetener that is extracted from the bark of the birch tree. The glycemic index (GI) is a numerical scale that shows how quickly and how high a certain food can raise our blood glucose (blood sugar). The lower it is, the more favorable it is for blood sugar. Xylitol is a chemical compound with the formula C5H12O5 and is a colorless or white crystalline solid that is easily soluble in water. It is extracted from birch bark, corn cobs, cotton and sunflower husks, it is also called birch sugar. The process of chemical transformation itself consists in the fact that xylose (C5H10O5) is extracted from the raw material - the so-called "wood sugar", and now xylose is restored under conditions of high pressure and temperature with the participation of a number of catalysts to the sweetener xylitol. In terms of energy value, the composition of xylitol does not differ much from the sugar we are used to, but the sweetener interacts differently with the body. Its glycemic index is especially valuable, if sugar has 70 units, then xylitol has 10 times less - only 7 units. Xylitol is used in folk medicine, especially often as a laxative and choleretic agent. It also relieves inflammation of the middle ear, nasopharynx and asthma symptoms. Xylitol is a good sugar substitute because it does not affect blood glucose or insulin levels and does not damage tooth enamel. It fights the bacterial infection Candida Albicans.
