What is special about Demerara brown cane sugar?

Demerara cane sugar is more intense in flavor due to its higher molasses content and has a larger particle size than regular brown sugar, which adds a pleasant crunch to food.

How is it different from white sugar?

In the case of white sugar, the molasses is separated from the sugar crystals during centrifugation, leaving colorless pieces. It is then further refined and filtered. Demerara sugar is not refined and is all natural and organic. Molasses from the cane juice crystallizes to produce Demerara sugar. The molasses content gives it an intense flavor that sets it apart from other sugars.

How Demerara sugar is made

When the sugarcane plant is pressed, it produces a brown sap that we call molasses. This sap is the main ingredient from which all sugars come. To produce Demerara sugar, the molasses is evaporated, which causes the sugar in it to crystallize. After evaporation, large crystals of golden brown sugar are obtained, which have a strong molasses aroma. Therefore, the production of this sugar is almost entirely organic.

Because this sugar is not refined, it retains all its minerals and vitamins - especially calcium, magnesium, vitamins B3, B5 and B6.

It is brown to reddish in color, sweeter than white sugar and has a pleasantly hint of caramel and vanilla flavor. It is slightly moist to the touch, which is due to the molasses.

Where does this sugar come from?

Demerara brown cane sugar originates from the former Dutch colony of Guiana in South America, which was once called Demerara. There, the tradition of sugarcane production dates back to the 17th century and is famous for the distillation of the famous local rum. However, nowadays the largest exporter of this type of sugar is the island of Mauritius in Africa.

Benefits of Demerara Sugar

The little sugar we need should preferably come in the form of natural sugars, and the intake of refined sugars is highly discouraged. In this regard, brown cane sugar "Demerara" is less processed than white sugar and is therefore a more natural and healthy option. Keep in mind that "Demerara" sugar has a more vibrant and intense molasses flavor and can therefore change the taste of the food you add it to.
