Sugar is a delicious and highly valued product that has become synonymous with pleasurable sensations and strong attachment over the centuries. However, in recent years, as a result of industrial production methods, it has acquired a bad reputation as a food that is harmful to health.
Traditional Ayurvedic texts describe several types of sugar. It can be extracted from dates, honey, beets, grapes and other fruits, as well as from cane, as is the case with Sharkara®. The latter has special qualities and is highly valued in Ayurveda. Healers using the methods of this traditional Indian medical practice recommend it for disturbances in the balance of pitta dosha (increased acidity and disturbances in the secretion of hormones, enzymes and bile).
How is Sharkara® produced?
Sharkara® is produced by hand in small factories in India. The sugarcane is first boiled for a long time, during which time contaminants and acid-forming substances are periodically removed. At the end of the process, the volume of the product is reduced by a third.
The resulting molasses is poured onto special lattice molds to produce large, irregularly shaped crystals. These crystals are then slowly dried in the Indian summer heat to extract their beneficial Ayurvedic properties. Finally, the crystals are crushed into small pieces and ground. No chemical additives are used in any of the production stages.
