The cocoa tree (Theobroma cacao) is an evergreen tropical plant known to mankind for millennia. It originates from Central and South America and grows in the areas around the Equator. Criollo is an ancient, non-hybrid variety with a rich, balanced and dense taste. A very small part of the world production of cocoa beans is of this variety, because of their more difficult cultivation and relatively lower yield. Criollo is the highest quality and sought after of all cocoa varieties.
Cocoa powder is obtained after extracting the cocoa butter from the cocoa mass. The remaining particles are ground into a fine powder to obtain a product with a dark brown color and a strong aroma. The production method is extremely gentle, which preserves all the nutritional qualities of the cocoa.
