Mattisson's "Flower of Salt" or Fluer de sel is a Celtic sea salt that is hand-harvested from tidal pools off the coast of France, in one of the cleanest corners of the earth - the province of Brittany. Due to the laborious collection, Fleur de sel is the most elite and expensive salt in the world. It crystallizes on the surface of seawater, after which its fragile crystals are collected by hand, without the use of metal tools and only during a small period of the year. For every 40 kilograms of Celtic gray salt, only one or two kilograms of Fleur de sel are obtained, and it has a completely different crystal structure from that of other salt. The ancient Romans did not consume the salt that is today called Fleur de sel, but used it as a medicine, adding it to ointments and tinctures.
Chemical composition
The delicate salt petals of Fleur de sel are not processed industrially and have a richer content of minerals and other trace elements. Fleur de sel retains moisture just like coarse Celtic salt. Its moisture content is about 10%, compared to the standard 0.5% in table salt. It contains sodium chloride, calcium, potassium, magnesium and iron. The special taste is due to the high concentrations of iron, magnesium and sodium chloride.
Application
Fleur de sel is a natural salt created by the sea, the sun and the wind. It is a real, unrefined and unprocessed salty delicacy. After natural evaporation, with the help of the sun's rays and the wind, a layer is formed, thin as frost, with fine, fluffy, snowflake-like crystals that melt in the mouth. This unusual salt is highly valued and is often used as a finishing touch for various types of food. As for its effect on human health, it is a salt rich in minerals. With its unusual taste and texture, Fleur de sel is highly regarded in cooking. It is so delicate that it is impossible to really salt food with it. At the same time, it sharpens and prolongs the sweet flavors of desserts. It is not subjected to heat treatment and is added to food immediately before serving. Due to its high humidity, the salt dissolves slowly in the mouth and retains the taste for a longer time. Fleur de sel is a suitable salt for hot and cold dishes of meat, seafood, fish and vegetables. It also pairs wonderfully with desserts, as the subtle marine flavor highlights the flavor characteristics of ice creams, pastries and creams, dark chocolate and fruits.
